Zucchini Pasta with Vegan Parmesan

I love this easy to cook recipe. This is a great recipe to make if your short on time and want something nutritious and tasty! Zucchini pasta is a great alternative to traditional pasta. Zucchini is rich in nutrients such as, vitamin A and magnesium to name a few. What’s fun about this recipe is, you can make it in many different ways. Add other favorite ingredients and make it your own!

*Tools: Zucchini Spiralizer is easy to use. Amazon has a variety to choose from under $30. You can also use a julienne peeler to prepare your zucchini.

Prep: 10 minutes Cook: 20 minutes

Makes 2-4 Servings

Ingredients:

  • 3-4 Medium to Large Zucchinis ( amount may vary depending on family size)

  • 2-3 Sliced Italian Vegan Sausage or any protein of choice if you choose((Optional).

  • 1 Diced clove of garlic or 1/2 tsp of garlic powder

  • Salt and Pepper, to taste

  • 1-2 Tbsp Grape seed oil or Olive Oil

  • 1-2 Cups of Tomato Sauce: One of my favorite sauces to use is Cucina Antica, has all natural ingredients and no sugar added. Any sauce of your preference will work.

  • 1/2 Cup of shredded vegan parmesan cheese ( I like Violife Vegan Parmesan)

Instructions:

Cooking Tomato sauce and sausage:

  • Heat 1Tbsp of oil to pan

  • Add sliced Italian Vegan sausage or any protein of choice (Optional)

  • Cook for 5-6 minutes, time will vary depending on what protein you use

  • Add tomato sauce, cook and stir until sauce is warmed through, about 3 minutes. Place sauce to the side.

Cooking Zucchini:

  • Wash zucchini, cut off both ends and pat dry to remove excess water.

  • Spiralize or peel zucchini into noodle-like ribbons.

  • Heat one table spoon of olive oil (oil of choice)

  • Once oil is hot, add chopped garlic and saute for 30 seconds. Note: if you are using garlic powder, you will add this towards the end of your dish.

  • Add zucchini noodles and saute for 5-6 minutes, until just tender and al dente.

  • Season with salt and pepper to taste. Add garlic powder and make sure thoroughly coat zucchini pasta.

  • Serve the tomato sauce over zucchini pasta ,sprinkle parmesan cheese on top and enjoy!
