Sitira's Tempeh Vegan Wraps

 

Makes 4 Servings

Sandwich wraps are a great to increase your vegetable intake and maximize on your nutrients! Wraps are quick and easy to make when running short on time.  This recipe is versatile and allows you to be creative when preparing your wrap. You can add or substitute with any of your favorite veggies or protein of choice. 

Ingredients for sauce

¼ cup vegan or low fat mayo

2 tsps. Sriracha sauce

½ tsp dark sesame oil

½ teaspoon low-sodium soy sauce or Braggs Liquid Aminos

Ingredients for wrap

4 whole grain wraps( Substitute for : Regular, Gluten Free, or Spelt Wraps)

3 tempeh strips of  “Fakin Bacon”

1 -2 medium avocado, pitted, peeled and sliced

½ cup of halve grape tomatoes

1 cup of arugula (or leafy greens of choice)

Directions 

Step 1

·      Combine all sauce ingredients in bowl and whisk well.  Cover and refrigerate until needed.

·      1-2 tablespoons of olive oil or grape seed oil to pan on med low heat

·      Add tempeh strips to pan and for about 5 minutes on each side

·      Place tempeh strips to the side after cooked

·      While tempeh strips are cooking, start prepping all vegetables

Step 2

·      Spread one tortilla with sauce

·      Add two “Fakin Bacon” strips

·      Add sliced grape tomatoes, arugula and avocado

·      Fold or wrap tortilla

·      Cut in ½, add tooth picks to hold and serve

The Challenge:

Consider more incorporating more plant based options on to your plate. Pick a day of the week to create and experiment with a meatless meal or try a vegetable you haven’t had before. Adding variety to your diet can increase overall well-being!
